    What are the health benefits of eating organic eggs?
    Eating organic eggs is an excellent way to minimize risk of exposure to antibiotics, or synthetic hormones and pesticides while obtaining a healthy dose of nutrients.
    Egg protein is the gold standard of protein in food, and eggs are nutritional powerhouses, containing almost every essential vitamin and mineral needed by humans.
    Egg yolks are one of the few foods that naturally contain vitamin D.

    If you love eggs but still feel a bit guilty when you eat them, here’s some happy news: eat your eggs with a smile, because they’re good for you.

    Nutrition recommendations have lifted the cloud over eggs and the thinking now is that an egg a day is OK.

    For much of the past 40 years the public has been warned away from eggs because of the risk of heart disease. Unhealthy serum cholesterol levels have, after all, been linked to increased risk of cardiovascular disease, and eggs are relatively high in dietary cholesterol.

    Increasing understanding about the causes of high LDL (bad) cholesterol levels has helped us unscramble the difference between cholesterol in the blood and cholesterol in food.

    Cholesterol is made naturally in the bodies of all animals and humans. It is necessary for the production of hormones and vitamin D, and to keep cell walls healthy. The liver makes most of the cholesterol needed by the human body so you shouldn’t have to worry about getting enough from your food.

    Dietary cholesterol is found in animal foods, such as meat, fish, poultry, dairy products and, of course, eggs. While the cholesterol in food can raise your blood cholesterol levels, researchers now know that consuming too much saturated fat and trans fat generally contributes more to unhealthy serum cholesterol levels.

    Some research has even questioned the connection between egg consumption and cardiovascular disease.     The Harvard School of Public Health’s research showed the dietary cholesterol in eggs does not have a negative effect on blood cholesterol levels of healthy people. This and numerous other studies have shown there is no link between eating eggs and a higher risk of heart disease or stroke for healthy adults. Some recent studies have even shown that HDL (good) cholesterol increased when people ate an egg-supplemented diet.

    Given this research, most of us can eat eggs without guilt. However, about one quarter of the population need to limit their cholesterol consumption because they are sensitive to dietary cholesterol, which affects the amount of cholesterol in their blood.

    These people include those with high cholesterol and/or high triglyceride levels.

    Guidelines not to limit egg consumption have been revisited because of the latest research, but also due to a better understanding of eggs’ nutritional benefits. Eggs provide a number of heart healthy nutrients, such as folate, vitamins E and B12, omega 3 and omega 6 fatty acids, as well as antioxidants such as lutein and zeaxanthin, which are important for good eye health. Eggs also contain vitamin D and A, iron, phosphorus and zinc.

    We know that one egg has little total fat — just five grams, of which 1.5 grams is saturated and 3.5 grams is healthy unsaturated fat.

    Eggs also are a superb source of choline. Recent research has also found choline to be an essential nutrient needed for the normal functioning of all cells. It is especially important for proper liver, brain and nerve function, memory and transporting nutrients throughout the body. Research is providing more and more details about the benefits of choline and that most people are not getting enough.

    The National Academy of Sciences now recommends an increased choline intake for pregnant and breast-feeding women (450 and 550 mg).

    Studies show that choline works together with folic acid in many of the pathways that involve nervous system development during pregnancy. Choline seems to prevent birth defects, and play an important role in infant brain development, mainly in memory function. Two eggs provide about 250 milligrams of choline or roughly half the recommended daily intake for men and women (550 mg and 425 mg respectively).

    Choline also plays an important role in heart health. It seems to have a role in breaking down homocysteine, an amino acid in the blood that may be associated with an increased risk of heart disease. In fact, research shows that choline deficiency results in increased homocysteine levels.

    If you are concerned about your blood cholesterol level, reduce the amount of saturated fat and trans fat in your diet rather than reducing your egg intake. Choose omega-3 eggs to protect your heart and enjoy the whole egg. The yolk is loaded with carotenoids, vitamin A, vitamin E and choline. One egg contains twice the choline found in a three-ounce (85 gram) beef steak.

  3. McDonald’s Massacre

    So, I work in a chemical laboratory, and while creating a new formulation for one of our products, I came across the accusation that this certain chemical is approved for use in food products. One serious offender being McDonald’s McChicken nuggets.

    This offending chemical is, Polydimethylsiloxane. Let’s call it PDMS. Take a look at the Material safety data sheet.

    So, here it tells us that PDMS, under section 11: Toxicological effects, has a low ingestion hazard.

    So It’s low. But It’s still there and It’s still a risk.

    Let’s not forget, PDMS was the material originally used for breast implants, but was deemed too hazardous to human health. So, It’s not ok to stick it into your breast’s, but It’s ok to feed it to your kid’s apparently.

    But check this out. Formaldehyde is a known carcinogenic. Guess what PDMS is degraded to under heat? Well one of the compounds happens to be Formaldehyde. Check out the second part of this link.

    As we know, vitamin K2 is one of the most important nutrients that is greatly lacking in the American diet. (7) Vitamin K2 is a product of bacterial fermentation, so kefir is a likely a good source of this nutrient, especially if made with milk from pastured animals. (8) Vitamin K2 plays a key role in calcium metabolism, where it is used to deposit calcium in appropriate locations, such as in the bones and teeth, and prevent it from depositing in locations where it does not belong, such as the soft tissues and the arteries.     Research has also demonstrated that kefir may have an anti-tumor effect. In one study, kefir consumption inhibited tumor growth and induced the apoptotic form of tumor cell lysis, suggesting that kefir may play a role in cancer prevention. (12) When applied topically, kefir and its polysaccharide compounds have even been shown to be effective antimicrobial and anti-inflammatory agents for improved wound healing. (13) (14)

  5. Myths & Truths

    MYTH: People with high cholesterol are more prone to heart attacks.

    TRUTH: Young and middle-aged men with cholesterol levels over 350 are slightly more at risk for heart attacks. Those who have cholesterol levels just below 350 are at no greater risk than those whose cholesterol is very low. For elderly men and for women of all ages, high cholesterol is associated with a longer lifespan.

    MYTH: Cholesterol & saturated fat clog arteries.

    TRUTH: There is very little cholesterol or saturated fat in the arterial plaque or clogs. Most of the material is a calcium deposit akin to lime and most of the fatty acids are unsaturated.

    MYTH: Eating saturated fat and cholesterol-rich foods will cause cholesterol levels to rise and make people more susceptible to heart disease.

    TRUTH: Many studies show no relationship between diet and cholesterol levels; there is no evidence that saturated fat and cholesterol-rich food contribute to heart disease. As Americans have cut back on saturated fat and cholesterol-rich foods, rates of heart disease have gone up.

    MYTH: Cholesterol-lowering drugs have saved many lives.

    TRUTH: In the two most recent trials, involving over 10,000 subjects, cholesterol-lowering did not result in any improvement in outcome.

    MYTH: Countries that have a high consumption of animal fat and cholesterol have higher rates of heart disease.

    TRUTH: There are many exceptions to this observation, such as France and Spain. Furthermore, an association (called a “risk factor”) is not the same as a cause. In wealthy countries where people eat a lot of animal foods, many other factors exist that can contribute to heart disease.

    Of all the information on the nutrition facts panel on food labels, cholesterol may be the most misunderstood.

    Part of the confusion comes from the fact that cholesterol in food isn’t the same thing as the cholesterol that clogs arteries. To be sure, foods high in cholesterol can cause blood levels of cholesterol to rise. But only about one in three people seem to be especially susceptible to the effects of cholesterol in food.

    “And even then, dietary cholesterol isn’t the biggest worry when it comes to heart disease,” says Kathy McManus, MS, RD, director of nutrition for Brigham & Women’s Hospital in Boston. “Studies show it’s only about half as important as saturated fat and trans fat in raising serum cholesterol levels.”

    Cholesterol-Free Food: What Does It Mean?

    All those factors can make it easy to get confused when you’re trying to make a healthy choice at the grocery store. Many foods trumpet themselves as being cholesterol free or low in cholesterol. That’s an easy claim to make. The main sources of dietary cholesterol are animal foods that don’t carry nutrition facts labels, such as:

    organ meats
    eggs
    shellfish
    Cholesterol-free labels are misleading in another way. Foods loaded with saturated fat or trans fats can claim they contain zero cholesterol, but they’re actually more of a threat to your heart and arteries than foods with a little cholesterol and less saturated fat.

    Cholesterol and the Great Egg Debate

    One source of confusion has long been eggs. A typical egg contains about 200 milligrams of cholesterol, but only 1.5 grams of saturated fat. When researchers first linked high blood cholesterol levels to heart disease, eggs got a bad rap.

    But there’s never been good evidence that eggs are a major factor in high blood cholesterol levels or a contributing cause of heart disease.

    In fact, when researchers at Harvard Medical School analyzed data from almost 120,000 men and women, they found that eating the equivalent of an egg a day did not increase the risk of heart disease or stroke. A more recent Harvard Medical School study, published in 2008, also found that otherwise healthy men could eat up to seven eggs a day with little risk. The only danger showed up in men with diabetes, which is known to increase heart disease risk.

    Indeed, studies suggest that only about 30% of people are particularly susceptible to the effects of dietary cholesterol on blood cholesterol levels.

    And overall, the effects of dietary cholesterol are relatively small compared with saturated fat and trans fats.

    In a review of studies in which volunteers were fed eggs, researchers found that lowering the amount of dietary cholesterol by 100 milligrams a day resulted in only a 1% reduction in blood cholesterol levels. Replacing saturated fat with unsaturated fat had a much more beneficial effect on cholesterol.

  8. Nanoparticles Kill Blood Vessel Cells in the Human Brain

    A study funded in part by the Superfund Basic Research Program at NIEHS shows that nanoparticles of aluminum oxide can adversely affect and even kill specialized endothelial cells that line blood vessels in the human brain.

    The researchers designed this study to determine the effects of nano-scale particles of aluminum oxide on the human blood-brain barrier. In cell culture systems, endothelial cells that line the interior of blood vessels in the brain were treated with nano-alumina, normal sized alumina particles, carbon nanoparticles, or normal sized carbon particles. After exposure, the researchers assessed cell structure, cell death, mitochondrial effects, and tight junction proteins. Laboratory rats were given intravenous doses of nano-alumina.

    In 2005, aluminum oxide nanoparticles accounted for 20 percent of the world production of nanoparticles. The particles are used in a variety of applications in the ceramics, electrical, engineering, and biomedical fields. Increases in the production and expansion of the uses of these particles will inevitably lead to greater human exposure.

    The nanoscale alumina and carbon particles were much more toxic than their respective compounds of normal particle size. Nano-alumina significantly increase cellular oxidative stress and disrupted the expression of tight junction proteins. The whole animal experiments confirmed the protein alteration with a loss of critical proteins in the cerebral blood vessels.

    The mechanics of liposomal encapsulated vitamin C

    Cardiologist and orthomolecular specialist Dr. Thomas Levy discovered exactly why the clinical results of this type of oral C could match the efficacy of many times as much vitamin C by IV.

    Dr. Levy was skeptical at first. He has treated thousands of patients with IV C and is seriously involved with orthomolecular (high dose vitamin treatment) medicine. He couldn’t believe what was happening with this oral C compound’s ability to match or surpass clinical results with much higher doses of IV C.

    He came to realize that the combination of vitamin C and essential phospholipids radically improved cellular bioavailability. Less than 20 percent of IV C gets into cells. But the Lypo-Spheric compound permits 90 percent of the C to get into cells. That’s because cell walls are made of fats. Vitamin C is water soluble.

    Tiny particles of vitamin C coated with phospholipids create molecules of vitamin C coated with a substance similar to the cell walls. Thus those coated vitamin C molecules can slip into the cells easily. The encapsulation also avoids diarrhea thresholds of normal oral C.

    Though not nearly as expensive, and much more accessible than IV C treatments, the product might not fit long term use on a low budget. So make your own! The homemade version might be slightly less than 90 percent bio-available to your cells.

    RECIPE

    Stainless Steel Ultrasonic Jewelry Cleaner
    Soy or Sunflower Lecithin
    100% Pure Ascorbic Acid = Vitamin C
    Distilled Water (No tap water because of contaminations)
    Blender or better a Braun Hand Held Mixer because it blends better

    First of all, at least 30 minutes before you start blending anything, you should:

    1.) Pour 3 TBsp Lecithin into 1 cup distilled water and soak at room temperature. Within 25 minutes all the granules should be soft. This is important, do not skip.

    2.) In a blender or a narrow, tall (over 7 inch tall) container for a stick or immersion blender, blend the soaked Lecithin for a few minutes. This will blend quickly.

    3.) Dissolve the 1 TBsp of Vitamin C crystals in ½ cup of COOL water. Keep stirring until all the crystals disappear. This is important, do not skip.

    4.) Combine the Lecithin and Vit C mixtures together with the blender.

    5.) Make sure the interior of the sonic cleaner is clean. Fill to max line and run. Change water. Repeat until you feel it’s clean. Do NOT use ANY cleaners, other than natural vinegar. Empty & wipe dry.

    6.) Pour the blended emulsion into the sonic cleaner. Keep the lid open, use a plastic straw or non-reactive implement for stirring (something that has not been used for anything else). I sat down in front of the sonic cleaner on the counter with a timer. I set the timer for 30 minutes and kept stirring. Do not skip.

    This is where the magic happens. Stirring makes sure as much of the liquid as possible is exposed closely to the sonic element where the encapsulation process happens.

    At the end of 30 minutes, all the foam has disappeared.
    When done you will have a mix that is about the color of milk. There will be some settling but shouldn’t be much, less than 5% of the mix or so.

    When done, pour mix into a reseal able GLASS jar and store in your refrigerator.
    This protocol furnishes about 12 grams (12000mg.) of vitamin C product.
    At 70% encapsulation efficiency, 8400 mg would be of the LET type. This
    solution will keep, acceptably, at room temperature for 3 to 4 days.

    Refrigerated, it will keep much longer. We use it so fast around our
    place…there isn’t enough left to be concerned over storage. The
    ” homogenizing effect ” is so powerful that after 3 days at room temperature,
    no precipitation or solution separation appears evident.

    Dosage: Take on an empty stomach, preferably 1 hour before you eat and don’t eat for 30 minutes after. Dosage varies… from a couple of teaspoons 2 times a day to 1-2 oz. shots 2-3 times a day. You can use the same recipe for Glutathione as well. If you start to get a headache that lasts more than a day, you could either be detoxing or you are having a reaction to the Soy Lecithin and should switch to Sunflower.

  10. Gout, a condition that afflicts more than 1% of U.S. adults, is characterized by abnormally high blood levels of uric acid (urate). Urate crystals may form in joints, resulting in inflammation and pain, as well as in the kidneys and urinary tract, resulting in kidney stones. The tendency to develop elevated blood uric acid levels and gout is often inherited; however, dietary and lifestyle modification may be helpful in both the prevention and treatment of gout. In an observational study that included 1,387 men, higher intakes of vitamin C were associated with lower serum levels of uric acid. More recently, a prospective study that followed a cohort of 46,994 men for 20 years found that total daily vitamin C intake was inversely associated with risk of gout, with higher intakes being associated with greater risk reductions. The results of this study also indicate that supplemental vitamin C may be helpful in the prevention of gout. Interestingly, a randomized, double-blind, placebo-controlled trial in 184 adult nonsmokers reported that vitamin C supplementation (500 mg/day) for two months lowered serum concentrations of uric acid compared to placebo.

  11. Cataracts

    Cataracts are a leading cause of visual impairment throughout the world. In the U.S., cataract-related expenditures are estimated to exceed $3 billion annually (33). Cataracts occur more frequently and become more severe as people age. Decreased vitamin C levels in the lens of the eye have been associated with increased severity of cataracts in humans.   13. Make your own Liposomal Vit C. RECIPE

    Stainless Steel Ultrasonic Jewelry Cleaner
    Soy or Sunflower Lecithin
    100% Pure Ascorbic Acid = Vitamin C
    Distilled Water (No tap water because of contaminations)
    Blender or better a Braun Hand Held Mixer because it blends better

    First of all, at least 30 minutes before you start blending anything, you should:

    1.) Pour 3 TBsp Lecithin into 1 cup distilled water and soak at room temperature. Within 25 minutes all the granules should be soft. This is important, do not skip.

    2.) In a blender or a narrow, tall (over 7 inch tall) container for a stick or immersion blender, blend the soaked Lecithin for a few minutes. This will blend quickly.

    3.) Dissolve the 1 TBsp of Vitamin C crystals in ½ cup of COOL water. Keep stirring until all the crystals disappear. This is important, do not skip.

    4.) Combine the Lecithin and Vit C mixtures together with the blender.

    5.) Make sure the interior of the sonic cleaner is clean. Fill to max line and run. Change water. Repeat until you feel it’s clean. Do NOT use ANY cleaners, other than natural vinegar. Empty & wipe dry.

    6.) Pour the blended emulsion into the sonic cleaner. Keep the lid open, use a plastic straw or non-reactive implement for stirring (something that has not been used for anything else). I sat down in front of the sonic cleaner on the counter with a timer. I set the timer for 30 minutes and kept stirring. Do not skip.

    This is where the magic happens. Stirring makes sure as much of the liquid as possible is exposed closely to the sonic element where the encapsulation process happens.

    At the end of 30 minutes, all the foam has disappeared.
    When done you will have a mix that is about the color of milk. There will be some settling but shouldn’t be much, less than 5% of the mix or so.

    When done, pour mix into a reseal able GLASS jar and store in your refrigerator.
    This protocol furnishes about 12 grams (12000mg.) of vitamin C product.
    At 70% encapsulation efficiency, 8400 mg would be of the LET type. This
    solution will keep, acceptably, at room temperature for 3 to 4 days.

    Refrigerated, it will keep much longer. We use it so fast around our
    place…there isn’t enough left to be concerned over storage. The
    ” homogenizing effect ” is so powerful that after 3 days at room temperature,
    no precipitation or solution separation appears evident.

    Dosage: Take on an empty stomach, preferably 1 hour before you eat and don’t eat for 30 minutes after. Dosage varies… from a couple of teaspoons 2 times a day to 1-2 oz. shots 2-3 times a day. You can use the same recipe for Glutathione as well. If you start to get a headache that lasts more than a day, you could either be detoxing or you are having a reaction to the Soy Lecithin and should switch to Sunflower.

    Did you know that you are exposed daily to enzyme inhibitors that contribute to decreased enzyme activity in the body?
